Finnish school dining in the 80’s has ruined this dish for me.
The meat was really rubbery with slimy fat and the potatoes were hard on the surface and dry on the inside, because they were shipped already pealed and quickly warmed using high heat industrial steam oven.
No matter how well this dish is done I always return to those days of culinary torture and loose my appetite.
It wasn’t all bad. It was fun morbid bingo to see who gags first on a piece of slimy meat and the potatoes jumped back up if you smashed them on the floor, which was always a laugh. There was variation on the bounciness and some day you might get the champion.
Although you shouldn’t play too much, because in 1-3 grades of elementary school there was a teacher guarding the exit and checking if your plate was empty enough. If there was too much waste, they would start checking older students too.
