Three years ago I made some basic Italian beef with pureed tomatoes and red wine. I had leftovers and canned them for later.
Combine that with oven fries, smoked mozzarella and some seasonings and we have this monster meal. Not available in stores.

Exactly. Brings the heat closer to the food without the risk of burning and allows for the occasional doneness check without letting so much heat out.

Two decades ago I wanted fries but didn’t want to waste oil. That’s when I created my recipe.
Taco seasoning.
Chili powder.
Italian seasoning.
Montreal steak seasoning.
Salt.
Anything red.
I have made so many variations over the years. This time I went with some homemade taco seasoning, cumin, tajin and extra salt. I typically use peanut oil but use whatever you got with a high smoke point.
