Smoked for 1.5 hours then deep fried until crispy. Tossed them in a classic buffalo sauce and served with smoked green beans, tater tots and carrot sticks. Pic is pre-sauce, I think they look gorgeous fresh out the fryer.

    Honestly you can just do a dry rub and skip the sauce, buffalo is a favorite in our household though!

      I’ve seen pictures of buffalo and they definitely can’t fly, so how do you get buffalo wings?? /s

      Typically I use a sweet BBQ sauce. I’ve done dry rubs also, they seem to be more hit or miss in my experience though.

        The wings don’t come from the normal buffalo you see when you look up “buffalo”. There’s a separate animal also called buffalo that have wings, that buffalo wings come from. They’re just camera shy, hence the lack of photos.

          Ah that makes sense. Im assuming each buffalo with wings have many sets of wings since with wings that small but able to pick up a creature the size of a buffalo they must have a lot of them.

          True, I’ve had “bad” chicken wings but they were just not how I liked them but I could see other people liking them. Like I tried some “honey apple pineapple glaze” chicken wings, they were so sweet I think 5 of them would put me in a diabetic coma. That said I could see someone with a sweet tooth liking them.

          My favorite is breaded chicken wings with BBQ sauce and some mayo based salad(either potato or macaroni typically) on the side if going large meal some refried beans.

            I think sweet can be good if it’s balanced with spicy. Otherwise it gets cloying. Never tried breaded wings before, I always just focus on crisping the skin as much as possible. Will have to think on that one…

              Breaded is a more work which is why I don’t typically do it but they are my favorite. Obviously depends on spices in the breading too and type of breading(bread crumbs or panko for example).

                  Make it how you like fried chicken but only fry it enough to get the breading to solidify and stick(don’t worry about frying till chicken is cooked through) . Next coat them in a sauce and smoke them(this is where the chicken will be thoroughly cooked).
