Life is crazy right now. I had to rebuild my cell phone today and my wife is craving comfort food with no nutritional value.

All cooking counts if it stops you from paying $5 to $6 for a single grilled cheese and fries at someplace that actually offers that.

Cost per person, $1.20

Phone surgery was a success. New battery and screen. But this is temporary because this model goes EOL next month.

Cheese with maggots or mold is fine but the moment it becomes easy to use it’s “othered”. If it wasn’t “American” it would receive a better reception.

It’s a little more than one. And these days there are ones that aren’t cheese at all.

This one was on the shelf right next to it.

Water, Food Starch, Palm Oil, Modified Food Starch, Milk Protein Concentrate, Salt, Natural Flavor, Sodium Phosphate, Carrageenan, Stabilizer (Xanthan, Locust Bean, Guar Gums), Sorbic Acid As A Preservative, Lactic, Acid, Artificial Color.

I don’t care for the cheap “cheese”, but I will absolutely love American cheese - proper American cheese, which you can get from any grocery deli - rather than Kraft singles.

In my 60 American years, I believe my only experience with “American” cheese has been singles (Kraft or similar). I don’t like those at all.

What’s the distinction with the stuff in the deli?

Real “American” cheese was originally and still typically is colby and jack, gently melted, with sodium citrate added, which is what changes the texture completely and makes it nice and melty.

Kraft singles are designed to mimic this - and whatever, they are what they are, but a proper American cheese will be as tasty as the cheese it’s made from. And technically, you can make your own - with any meltable cheese - although I probably never would. Difficult to get a loaf of it at a proper size to slice, difficult to slice… heh

To me, even a good American cheese is really better in a grilled cheese or on a burger or whatever. It’s fine to snack on, but if I’m snacking on cheese, I’m going to the cheese shop and spending way too much money on tasty little morsels :)

Thanks for this. I’ll check out the deli and see what I can find.

I think I’ll agree with your third paragraph regardless.

Glad to read that. That was by far the less wrong option, still pass I think, but it’s basically oil with a bit of egg so I’m not really sure why I find it so weird. I might brush a bit of egg on the bread for my next toasties, tho, that doesn’t weird me out unlike spreading mayonnaise on the outside of a sandwich.

I do both sides toasted with mayo. Lightly at first on the “inside” flip them over and put the cheese on the hot bread, let the sides toast a few seconds then put together and flip as necessary. But you gotta make sure the mayo has toasted into the bread, so don’t use too much. It’s not a Monte Cristo!

Butter for the intimate 1 or 2 grilled cheeses, so they can be tended to.

Mayo if you have to make them reliably and fast, mayo gives you more wiggle room when it comes to burning compared to butter.
